Yukio Hattori, president of Hattori Nutrition College in Tokyo, introduces unique labors of love—items grown and produced with care and integrity by hardworking suppliers across the country.

“We began operations in 1984 and five years later started raising chickens organically. Nobody was doing that back then, and even today it’s cost-prohibitive,”says Shigenori Mukoyama of the 16-hectare Kurofuji Egg Farm he runs in Yamanashi with his two sons, Yohei and Ikki. At 1,100 meters elevation with natural spring water on-site and no development upstream,the location is ideal for free-range poultry farming.

At first Mukoyama had to travel abroad to research organic methods. Back in Japan, he shared the knowledge he had gained by hosting workshops, and eventually met enough like-minded growers to buy organic feed in bulk,mitigating the high costs. His rich topsoil is a blend of mulch and rock-based minerals. Its bacterial content boosts the birds’ natural immunity as it breaks down manure, returning it to the soil.

卵を産み始めるのは生後120日後。黒富士農場の鶏は毛並みに艶があり、目が生き生きとしている。
生後70 ~ 80日で農場に来る鶏はちょうど小学生くらい。平飼いの場合、鶏が卵をあちこちに産まないよう、約1カ月はしつけの期間にあてられる。
Chickens arrive at the farm at age 70 to 80 days and are ready to start laying eggs at around four months. Perky eyes and the natural sheen of their plumage are proof of their good health.
卵を集めるためのネスト台は鶏舎の中央に設けられている。
鶏舎内の地面にはサラサラの堆肥が敷かれ鶏たちも快適。
The nesting area lies in the center of the chickenhouse, the floor of which is covered in fine organic compost.
山梨大学と共同でサルモネラ菌の予防になると言われるクロレラの飼料化を研究中。
Mukoyama is collaborating with University of Yamanashi researchers to develop a salmonella-resistant feed from chlorella.
鮮やかな色の茹で卵。クセのないクリアな味。
オーガニック卵の他にも、「放牧卵」や安全性の基準が高い「さくら卵」なども生産・直売している。
Brightly colored yolks and a clean, clear taste are hallmarks of Kurofuji organic eggs. Non-organic free-range eggs are also sold.
